Looking at this tea as a whole it’s like a crossover between Mulberry Tea and Kabusencha. This Anji Bai Cha comes from Jiande, Zhejiang and is picked at the end of March (pre-Qing Ming).
The dry leaves (tips only) look very fresh, they have a long, leggy appearance and a saturated green color. Rolled skillfully they an appealing and uniform sight. The aroma resembles the aroma of Mulberry Tea leaves. After infusing however, the leaves were as fresh as the can get. They looked as if just picked from the bush – young, delicate with vibrant light green color and you can still see the midrib and veins. This is an experience very different from most other teas.
The liquor is extremely pale and very close to Kabusencha both in flavor and aroma. The flavor is clean and complex, reminiscent of fresh spring grass with sweet tones.
A rare treat, visually unique and appetizing. Should be tried by every tea lover at some point. This Anji Bai Cha is a superb example of how artful tea drinking can be.
